SASTOJCI:
1 manja mrkva, sjeckana3 češnja češnjaka, sjeckana
1 stabljika celera, narezana na ploškice
30 ml (2 žlice) maslinovog ulja
250 g bukovača, opranih i narezanih na ploške
1 grančica svježeg timijana ili ½ čajne žlice sušenog
Peršin list, sjeckani
Sol i papar
Sir ribanac ili Grana padano, za posipanje
PRIPREMA:
1. Mrkvu, češnjak i celer pržiti, uz stalno miješanje, oko 4 minute na maslinovom ulju.
2. Bukovače dodati, pirjati još 4 minute uz stalno miješanje. Zaliti s 700 - 800 ml vode, posoliti i popapriti.
3. Grančicu timijana ili sušeni timijan i sjeckani peršin dodati juhi. Ostaviti da zakuha, smanjiti vatru i lagano kuhati oko 20 minuta.
4. Poslužiti posipanu sjeckanim peršinom i sirom ribancem, uz preprženi kruh.

Ingredients:
1 carrot, chopped
3 cloves garlic, chopped
1 celery stalk, sliced
2 tbs olive oil
250g oyster mushrooms, washed and sliced
1 sprig of fresh thyme or ½ tsp dried thyme leaves
A handful of chopped parsley
Salt and pepper
Grated parmesan and toasted bread, to serve
Method:
1. Sauté chopped carrot, garlic and celery in olive oil on low heat for 4 minutes. Stir continuously.
2. Add oyster mushrooms, stir while cooking for another 4 minutes.
3. Add 700 - 800 ml of water, a sprig of fresh thyme (or dried thyme) and a handful of chopped parsley. Bring to the boil and simmer for 20 minutes.
4. Season with salt and pepper and serve with grated Parmesan cheese and toasted bread.
